Chef & Sommelier Luca Palmero Scatena  offers guests an authentic experience which combines tradition with innovation:   the food & wine heritage of the Liguria Region and inspiration from the never ending creativity of the Italian culinary scene.

Luca was born and lives in the Liguria region and brings a wealth of experience gained working in highly prestigious restaurants in Italy such as the Michelin starred San Domenico in Imola and La Locanda delle Tamerici near La Spezia.

The use of high quality ingredients allows Luca to employ a “simple” preparation technique, which will not overwhelm the core ingredients, but will in fact enhance their characteristics.

The focus on local high quality products has lead us to introduce extra virgin olive oil tasting as an additional way for guests to experience this region and Italy.  Liguria’s extra virgin olive oil is world famous and guests can discover its qualities by comparing it with other Italian extra virgin olive oils.

If you enjoy homemade bread, you may be interested to know that Luca has recently devoted his time to bread making, specifically the use of sourdough and selected flours, including a low gluten flour produced with an ancient grain.  In 2014 the old open air wood oven was restarted and guests can savor some of Luca’s “back to the roots” focaccia bread.

The dining area is in the renovated cellar on the ground floor of the Hotel: admire the old elliptical arch, the stone walls and the floor covered by large slabs of slate typical of the region. 

Weather permitting, guests can be served in the Terrace, overlooking the Levanto Valley and the Sea.  It will be a pleasure to relax here or in the nearby garden admiring the view and the sunset, while enjoying a glass of good local wine

Our Blog: the Ligurian Project

The Ligurian Project is born out of La Sosta di Ottone III Kitchen’s desire to provide its guests with a true experience of the area, which for us is also channeled through the use of the best products this region has to offer.

Locating the small, local producers who have a drive for excellence is like playing a game of hide and seek: scattered throughout Liguria’s hills and valleys, finding them takes all your time and patience. But it was definitely an effort we wanted to make. 

Through this blog, we want to share with you what we learned about food and wine throughout our very local travels.
