Dinner is served every evening (except Sunday) from  8.00 pm to 10.00 pm.

Luca Palmero Scatena and Fulvia Busco pay particular attention to the quality of the basic ingredients: local dairy products from the “organic valley” of the Val di Vara, fresh fish selected for us by Mariella and Umberto, olive oil from the farmer’s cooperative of the Levanto Valley, honey lovingly produced by Karen in the hills above Levanto , a fine selection of products from “Eataly” or the soft drinks from Lurisia made with ingredients certified by Slow Food.  Not to mention the wine selection... (Actually we will talk about it later in the chapter on the wine cellar).

The use of high quality ingredients allows Luca to employ a “simple” preparation technique, which will not overwhelm the core ingredients, but will in fact enhance their characteristics.  And ...  each evening is different!

Monday - The Chef’s Selection:  3 courses & dessert  -  €35.00 per person (excl.beverages). 

Wednesday to Saturday:  the Kitchen is  also open to non-resident clients.  Luca and Fulvia will   offer two set Menus a two taylor made options. 

Set Menus,  each Menu allows guests to discover  local flavours,  ranging from sea to land products:

-      The Chef’s Selection:  3 courses & dessert  -  €35.00 per person (excl.beverages)

-     The Chef’s Surprise:  5 courses & dessert   -  € 65.00 per person (excl.beverages) 

Made to Measure menus – we kindly ask guests to agree the taylor made menus with the Chef one day in advance:

-          The Food Menu   -  price range € 40.00/€ 70.00 per person (excl.beverages)

-          The Wine Menu  and ... the Chef will prepare a surprise menu to suit the wine selection – price range € 58.00/€ 100.00 per person. 

The Open Air Wood  Oven:  in 2014 Luca and Fulvia plan to restart the old Open Air Wood Oven to bake traditional local and Italian dishes such as stuffed vegetables, lasagna al ragù, fish, savoury pies and many others.

The idea is to bake on Tuesdays and organize it so that guests can serve themselves from the Buffet and enjoy their oven baked meal in the renovated cellar or “al fresco” on the terrace overlooking the Levanto Valley and the Sea.
